Let's see if I can remember this green pasta dish recipe that I fell in love with a few years ago and started making every week that year. It's been a while, but I think I've got it.
So, you boil your choice of pasta; I would usually do penne. In the meantime, you make the pasta sauce. This sauce was specifically to get me to eat more veggies, so let's see if I've still go it. You need a bushel of spinach, peas, broccoli, kale, and carrots. You sauté those babies up until the leaves look a little wilted. Throw them in a blender with a cup of oat milk, a cup of parmesan cheese, like half a cup of lemon juice, ground turmeric, ginger, paprika, salt, and pepper (spices to your liking), and a splash of the pasta sauce. Blend, blend, blend, and voilá! You should get a bright green-looking sauce to pour over your pasta. I like to pair it with some grilled chicken and dust with tajín because I'm a fiend for tajín.
I am aware I may have upset some Italians or pasta connoisseurs with this recipe, but you have to understand I'd burn cereal if you asked me to make it for you. I've been surviving off a jar of olives for every meal for the past month. So, gimme a break. This recipe took a lot out of me and at least I'm getting and getting vegetables!
Anyways, hope you all like it! Heck, maybe I'll make that tonight…
